It is, at its heart, a family affair. We are all formed by our families, standing on the shoulders of those who came before us to build something genuinely new. On the surface, we look like a food company—but we are so much more than that. We deliver authentic Trinidadian flavor, blending Indian spice, African influence, and Caribbean heat into our signature Roti. To power our plant-based menu, we chose Kioene—the 100% vegetable protein pioneer created by Italy’s Tonazzo family, who pivoted from five generations of meat butchery to embrace a sustainable future. By choosing plant-based over traditional meat, we cut environmental resource consumption by up to 12X.
Our food hits the streets in custom Volkswagen [VW] ID electric vehicles, each hand-painted by local artists as a rolling canvas to break down silos and mix the tribes. To keep our footprint truly zero-emission, we charge our fleet strictly between 01:00 and 07:00, performing active grid load balancing in collaboration with Enel Green Power [EGP].
Every route, charge cycle, and operation is intelligently orchestrated by BRAINSWARM 2.0, our collective intelligence platform built under the care of Nadeem Sajjad.

Who We Are
We are the collective DNA of three extraordinary dynasties, bound by bold vision, heritage, and uncompromising purpose.
Our story began with a simple revelation when world-class event organizer Federico Salza experienced the vibrant, deep flavor of our authentic Trini Roti—proving that this humble street food possessed undeniable global appeal.
To elevate it, we aligned with Kioene, created by Italy’s historic Tonazzo family, who famously abandoned five generations of traditional meat butchery to pioneer 100% plant-based protein. Their courage to venture into the unknown gave us the sustainable foundation to reimagine healthy casual street food for a modern planet.
Underpinning it all is the Samuel legacy. Strongly influenced by a grandmother-matriarch, Ruby Samuel who could recreate any garment or accessory seen in a fashion magazine by hand, and with her sewing machine. We inherited an innate sense of style, dignity, and deep human connection from her.
It is this exact spirit that allows us to command respect in any executive boardroom, or sit in a jail cell in Accra and captivate prisoners with stories and history.

One of the greatest highlights of my childhood was Sunday meals at Grandma Ruby’s home on top of the hill in San Fernando, where food meant community, warmth, and belonging. As a teenager in Pisa, Italy, I fondly remember Federico’s utter frustration watching me eat a primo, followed by a second primo, and then dessert before ever touching a secondo. He eventually gave up trying to teach me traditional Italian dining etiquette—though the ultimate irony was that nothing made Federico happier than eating simple hot dogs, hamburgers, and fries at Camp Darby.
For those who do not have enough, food remains a daily struggle, which is why we actively engineer sustainable, scalable solutions to ensure nourishing meals reach those who need them most. This mission comes to life in Sunset Roti. Sunset Roti is engineered to be healthy, planet-friendly, and inexpensive enough to be enjoyed every day—and multiple times a day—just as we do in Trinidad, and just as Federico fell in love with doing in Tobago over two decades ago.
